Shrimp Salad Sandwiches with Sweet Potato Fries

If you read about our trip to Savannah then you know we fell in love with shrimp salad sandwiches.  Well we got the urge to have another without the trek across Georgia. 

Here are the recipes to shrimp salad sandwiches and sweet potato fries. Aaron makes really good sweet potato fries and they are WAY cheaper than the store bought ones.


(Please note these measurements vary according to how many you want to serve; we make extra for lunch)


Shrimp Salad
  • 2 packages of frozen shrimp
  • 1 1/2 tablespoon light mayo
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh basil; chopped
  • pinch of salt and pepper
-We also added some Tony Chachere's seasoning and a drop of spicy mustard to add some bite

  • Boil shrimp until done
  • Chop shrimp to desired size and them mix with remaining ingredients
  • Add your choice of garnishes, bread and enjoy!!!!
Sweet Potato Fries
You can change the measurements to your liking; we estimate usually
  • 2 sweet potatoes
  • Sprinkle of Panko crumbs
  • Sprinkle of Tony Chachere's seasoning
  • Sprinkle of salt and pepper
  • Cinnamon
  • Cooking spray
  • Cut sweet potatoes to your desired size
  • Mix Panko crumbs, Tony's seasoning, salt, and pepper
  • Lay sweet potato fries on cookie sheet and coat with cooking spray
  • Sprinkle mixture onto fries
  • Top with cinnamon
  • Bake at 425 degrees for 40 minutes
