Chocolate Peanut Butter Bars

The Super Bowl is not just football and expensive commercials... it also means good food. We chose to bring a sweet to our get-together and found these Chocolate Peanut Butter Bars. Just imagine a massive Reese's bar. YUM!!!!!

Peanut Butter Bars
  • 1 pkg. Betty Crocker Peanut Butter Cookie Mix
  • 1 egg
  • 2 tablespoons butter
  • 1 cup semi-sweet chocolate chunks
  • 1 cup smooth peanut butter
Icing
  • 1 pound powdered sugar
  • 1 stick butter
  • 1/2 cup cocoa powder
  • 1 teaspoon vanilla
  • 2-4 tablespoons milk
Drizzle
  • 1/2 cup semi-sweet chocolate chips
  • 2 tablespoons butter
Mix together the cooke mix, egg, and butter.  Press into the bottom of an 8×10″ pan. 
Sprinkle chocolate chunks on top of mixture, pressing lightly.  
Bake at 400 degrees for 15-17 minutes, just until set (mine cooked a little bit faster so watch closely). Remove from the oven, and drop spoonfuls of peanut butter on the hot bars.  Allow the peanut butter to melt slightly before spreading over the cookie base with a spatula (peanut butter may mix with chocolate slightly). Cool completely.
In an electric mixer, beat together the butter, powdered sugar, cocoa, vanilla, and milk until light and fluffy (add just enough milk to make the frosting fluffy, soft and spreadable, without being wet and runny).
Frost the cooled cookie bars with the frosting.
*If you would like a decorative touch*
In a small, microwave-safe bowl, microwave the chocolate chips and butter together.  Mix together until smooth.  Transfer to a ziploc bag.  Snip off the edge of the bag and drizzle the chocolate over the chocolate frosting.
